RIDGEFIELD, WA – ilani Casino Resort is set to launch a steakhouse concept from the Cowlitz Indian Tribe this spring as part of its next phase of development, with the tribe independently owning and managing the new restaurant, Sovereign Steakhouse.
Sovereign Steakhouse will offer a modern approach to the traditional steakhouse experience with a menu that will feature a range of American beef, including USDA Choice and Prime cuts as well as regional Wagyu, alongside seafood and other offerings. The restaurant is designed to provide a contemporary, approachable setting for both special occasions and everyday dining.
This development is part of a broader series of property updates aimed at expanding guest offerings. Sovereign Steakhouse is expected to open in early May in the space currently occupied by Michael Jordan’s Steak House, which is scheduled to close ahead of the transition.
Michael Jordan’s Steak House was among the first partnerships to anchor ilani’s space at its opening in 2017, and the nearly decade-long partnership, facilitated by Cornerstone Restaurant Group, not only catalyzed ilani’s early vibrancy, but contributed to its sustained success. Michael Jordan’s Steak House will close after its final dinner service on Sunday, April 19.
