RANCHO MIRAGE, CA – Agua Caliente Casinos has launched a new series: “Raising The Steaks,” a collaborative culinary series that will bring one-of-a-kind dining experiences to its guests. Agua Caliente Casinos’ culinary team is collaborating with East Coast-based American chef and restaurateur David Burke. Red Horse by David Burke, an award-winning New York- and New Jersey-based modern American steakhouse concept with three locations, will bring his culinary style and ingenuity to the dining experience at The Steakhouse, a Forbes Four-Star restaurant at Agua Caliente Rancho Mirage from June 13-26, 2025.

Red Horse by David Burke at Agua Caliente Rancho Mirage will integrate signature design elements from the East Coast locations. The Steakhouse at Agua Caliente Rancho Mirage, will incorporate distinctive Red Horse touches throughout the space, including iconic red-and-white horse bridle bit wallpaper and the restaurant’s characteristic dinnerware.

The Steakhouse’s culinary team, led by Executive Chef Juan Morales, collaborated with Chef David Burke and his team to create an authentic one-of-a-kind experience and menu. Select classic dishes from The Steakhouse’s menu will be available throughout the two-week pop-up, along with David Burke’s signature dishes such as the Clothesline Bacon, Pork Chop with Jersey Shore Clams, and the DB Cake Pop Tree with Cotton Candy. Guests can look forward to an inspired fusion and culinary aesthetics where East Coast sophistication meets West Coast innovation.

“I always welcome the opportunity to collaborate with other chefs because I always learn something new, which is one of the things that makes me so passionate about cooking – that continuous learning curve,” said Chef Burke. “In this case with Chef Juan Morales, it’s particularly exciting to be able to introduce some of my culinary style for Red Horse to a West Coast audience.”

Red Horse at Agua Caliente Rancho Mirage begins Friday June 13 and runs until Thursday June 26, 2025.
